- 2 whole eggs + 2 egg whites (boiled)
- 1 cup veggies: celery, green onion (chopped) and spinach
- 1 1/2 tbsp mayonnaise
- 1/2 tsp sriracha sauce
- 1 tsp lime juice
- pinch of paprika
Boil 4 eggs. Peel, remove 2 yolks. Mash or blend together.
In a separate bowl, mix dressing ingredients and add to egg mixture along with chopped veggies.
Place on a bed of spinach. Enjoy!
